The University of Georgia's Cooperative Extension is also recognized as The National Center for Home Food Preservation and has a wealth of info regarding food preservation on their web site.
There is also a "Preserving Food at Home: A Self Study" course on this link where you can send in for a password to be able to access the course and quiz. It's not an intensive or involved course, but it is a good start for beginners.
